Cider is HUGE in Basque Country, and I wanted Basque Cider immediately on my first night there. At Casa Julián in Tolosa, my friend and I split a bottle of Bizio Zelaia Cider that was made with local Apples and super fizzy. Only a handful of bottles of this were made — like 1,000 if I remember correctly — and it was just insanely great (and still cost less than the average cocktail in the U.S.).
